Country Chutney

1kg /2lb 4oz plums (washed, stoned and chopped)
1kg/2lb 4oz cooking apples (peeled and cored
675g/1lb 8oz red tomatoes skin removed (drop into boiling water then cold and skin loosens)
350g/12oz onions peeled and chopped 2 medium courgettes seeds removed and chopped
250ml/1/2 pint malt vinegar
1kg 2lb/4oz brown sugar
75g/3oz sea salt
Mixed pickling spices (4 small chillies, 2 teaspoons whole cloves,2 small pieces of root ginger, 1 tablespoon mustard seed, 1 teaspoon ground cinnamon, 1nutmeg clove grated.)
6 litre jars, dry sterile and non - metal lids

Method
Put the vinegar and spices (wrap spices in a muslin bag and tie securely) into a large pan Add the sugar and bring to the boil stirring well. Add all the vegetables and fruit to the pan and heat gently until boiling. Reduce the heat and simmer until thick and smooth stirring occasionally. Be careful that it does not stick to the bottom of the saucepan so keep an eye on the heat. A range or slow cooker ring would be useful for this. It will take about 1 ½ hours. Pot, seal and date.
