This traditional Irish dish is mashed potatoes flavoured with cooked kale or green leaf cabbage, served with butter.
300g/ 1/2lb. kale or green leaf cabbage
One or two cubes of home cured bacon
450g (1lb) potatoes
5 spring onions, scallions or chives
150ml (5fl oz) milk or cream
salt and freshly ground black pepper
50-100 mg (2-4oz) melted butter
Prepare the kale by removing the tough stalks and washing well, dry and shred the leaves very finely. Cook in boiling water with the home cured bacon until tender about 10-20 Min. Drain well.
Cook the potatoes in their skins until tender, drain and steam for a few minutes covered with a cloth. Peel and mash while still very warm until very smooth.
Chop the onions and simmer in the milk and cream for about 5 Min.
Gradually add the milk to the potatoes and beat until very smooth and fluffy. Mix in the drained kale along with any seasoning. Add in a pinch of freshly grated nutmeg.
Heat thoroughly over a gentle heat and serve with a well in the centre for the butter.
